There are many reasons why carrots makes all the little bunnies want to have one. I mean, for one... this brightly colored root vegetable is so tempting that before you know it, you’re crunching away right down to the tops. In Ayurveda carrots are ideal for babies and those recovering from illness. You see, carrots are sweet yet purifying, pacifies the pitta, and relaxes the eyes. Carrots also increase the quality of breast milk, and during pregnancy reduces the risk of jaundice and can enhance baby's complexion... right on!
Carrot's cool nature is alkaline with a presence of vitamin A that nourishes the liver, and purifies the blood. Now that it is late summer, having fresh carrot juice with a hint of lime can help purify the liver especially since here in California this season has been so dry. Carrots are an Autumn winter root, and with three weeks left until summer official ends, let’s start having these roots more often.
Starting with our lil’ bunnies... Steam then puree Carrots into baby food, this will sure to be a treat they'll love. Maybe even try some heirloom carrots...They’re selling like wild at farmers market.
We like making carrot mint soup, and more than anything I love making our special gluten-free carrot cake... I can eat it for breakfast, lunch and dinner. If you like eating carrots raw, then the good news is, it will strengthen your jaw muscle and bones... A win win for all us bunnies.
