We were given a handful of Persimmons from a dear sweet neighbor boy, who came by the other day with his father... They had just picked a bundle from their tree, and so naturally after seeing this vibrant sunny colored fruit, it was time for a Persimmon post! Persimmons are astringent, which pacifies Kapha, but does not fare well for Vatas. Even in Vata season only Kaphas can enjoy the nutrients of this fruit. Persimmons are high in vitamin C, calcium, potassium and iron. They also have a higher levels of dietary fiber than apples.
My Sage love grew up having Persimmon pudding, so each year during this time we enjoy this delicious sweet fruit. It is a great time to give and receive so this was certainly a delightful treat.
Best way to eat: is by removing the top leaf with a paring knife and scooping out the flesh with a spoon. It’s also great to let the fruit ripen until it's soft and mushy... the best way to make the pudding.
Kapha—pacify with astringent, bitter, spicy. Aggravate with sweet, sour, salty. Favor: Astringent fruits like apple, pomegranate, cranberry, persimmon, small amounts of dried fruit.
